How to Make Tomato Berry Kale Ceasar Salad
This salad only takes 15 minutes and makes two generous size portions.
How to Massage Kale
First, take the kale leaves and make two cuts – one on either side of the stem going from the top of the leaf to the very bottom. Remove the kale stems. Cut the leaves into bite-size pieces.
In a large bowl, place the cut greens and drizzle a bit of oil. Use enough oil so that the leaves will be lightly coated, but not too much. You don’t want your greens soaked. You can also add a pinch of sea salt as well. I usually leave the salt out to cut down my sodium intake.
With clean hands, take the kale and scrunch them in your palms and between your fingers. Continue to work on the greens for a couple of minutes until the leaves turn a deeper green color. Massaging the kale will soften the texture. It’s so much more enjoyable to eat this way.
Assembling the Salad
Once your greens have been massaged and ready to go, add the Ceasar dressing right on top and toss the salad. Cut the cherry tomatoes in half. Cut the strawberries into long quartered pieces. Add the cherry tomatoes, strawberries, and blueberries on top of the salad and lightly toss.
Transfer the salad onto individual plates. Sprinkle the shaved parmesan cheese on top and enjoy!
