Eggplants are low-carb vegetables that can be included in a Keto diet and a Candida diet. They’re also Paleo and Whole 30 compliant. Eggplant is one of those vegetables that doesn’t have an overly strong taste which makes it one of the most versatile ingredients available. They can be used in recipes that call for either sweet or savory dishes. This recipe for eggplant fritters is one that I’ll make for breakfast but will then be repurposed as a lunch or dinner side dish.

How to Make Eggplant Fritters

  1. Cut the eggplant into ½-inch round disks. Poke holes into the flesh with a fork.
  2. Beat egg into a small bowl with salt and pepper. Add dried herbs and spices. Mix well.
  3. Heat oil on a frying pan on medium-low heat.
  4. Dip the eggplant disks into the egg mixture and place onto the heated pan.
  5. Cook each side for 3 minutes until cooked through and eggplant is softened.
  6. Remove from heat and serve hot.

How to store/freeze?

Store the eggplant fritters safely in the fridge for 3-4 days. 

Eggplant fritters are good for up to 2 months in the freezer. Place the cooked eggplant fritters onto a baking sheet and transfer them to the freezer for about 2 hours until solidified. Take the frozen fritters and put them into a freezer-safe Ziploc bag for storage.

When ready to be eaten, reheat the fritters in the microwave for 30-60 seconds.

Ingredients

  • 1/2 medium eggplant
  • 1 egg, beaten
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp oregano flakes
  • 1/4 tsp parsley
  • sea salt & pepper to taste

Instructions

  1. Cut eggplant into 1/3-1/2 inch wide discs. Poke holes on both sides of the discs with a fork.
  2. Beat 1 egg in a bowl. Dip the eggplant discs into the egg.
  3. Combine the sea salt, pepper, parsley flakes, and oregano flakes into a small bowl. Sprinkle on both sides of the eggplant discs.
  4. Heat oil in a skillet and cook eggplant for 3-4 minutes on each side until softened. Sprinkle garlic and onion powder on both sides while cooking.
  5. Remove from heat. Serve immediately.
